— See a small scale, pasture raised pig operation
— Learn how to slaughter on site with a low tech set up - including scalding & scraping
— Have hands on experience with seam butchery: breaking down into primals, subprimals, and finally - usable cuts
— Learn how (and why!) to use organ meats
— Learn how to cure bacon, render your own lard, and make sausages
— And much more!
Class details:
Class runs Friday, December 4th (noon start time) to Sunday, December 6th (wraps up mid afternoon)
Class fees:
— $800/person without lodging
— $1,000 with lodging at the farmhouse
