Reserve your spot NOW to join us this fall for a 2.5 day hands on workshop where you will learn how to slaughter, butcher, and preserve two pigs from field to freezer (or fork!) During this workshop, you will have the opportunity to:
— See a small scale, pasture raised pig operation
— Learn how to slaughter on site with a low tech set up - including scalding & scraping
— Have hands on experience with seam butchery: breaking down into primals, subprimals, and finally - usable cuts
— Learn how (and why!) to use organ meats
— Learn how to cure bacon, render your own lard, and make sausages
— And much more!
Class fee is $700/person and includes instruction & all meals during the day. A $350 deposit is REQUIRED to reserve your spot. $100 discount for couples. Space IS limited.
